1. Curry Mac n Alt Cheese
This is a yummy concoction where the flavours of India are infused into a classic western dish! What’s more? This recipe is made with our new cheddar cheese which is completely vegan and absolutely delicious !

Cook Time: 25 minutes
Total Time: 35 minutes
What you need
-
200 gm egg-free macaroni
-
Curry Powder
-
1 Onion, chopped
-
1 tbsp Olive Oil
-
3 cloves garlic, diced
-
Oregano, chilly flakes, to taste
-
Salt and Pepper, to taste
-
1 can Tomato , diced
-
Coconut milk
Method
Cook the paste in salted water with oil added to it till it's al dante. Drain the water and set aside
Take a large pan and add olive oil to it and let it heat
Dice the garlic and chop the onion and add it to the pan and saute until it turns golden brown, around 5-7 minutes
Add the curry powder and salt, and stir till the onion and garlic are completely coated. Let this cook for about a minute.
To this mixture, add the tomatoes and the coconut milk. Then add the AltCheese Vegan Cheddar and bring this to a simmer. After this, lower the heat to medium low and let this mixture simmer for 15 minutes.
Blend this mixture. Be careful while adding it, it’s hot!
Finally, add the al dente pasta and turn the heat to low. Let it cook till the pasta is perfectly cooked and the sauce has thickened.
Garnish with cilantro and enjoy! Yumm
2. Sun Dried Tomatoes and Olive Pizza
Who doesn’t love a classic Italian pizza drizzled with a splash of olive oil? Now, here’s a yummy vegan take on this classic recipe! All you have to do is use Alt Cheese’s Vegan Cheddar
Preheat over: 180 °C
Prep Time: 10 minutes
Cook Time: 40 minutes
Total Time: 35 minutes
What you need
Pizza Base

One and a half cups of water
-
Half teaspoon paprika, dried oregano and mixed herbs
-
Black pepper and salt
-
Pinch of garlic powder
-
Cayenne Pepper

1/4 cup quick-cook polenta
-
1 teaspoon olive oil
Toppings
-
4 tablespoons tomato puree
-
Black pepper
-
Dried herbs
-
Chili salt
-
2 slices Alt Cheese Cheddar
-
Spinach leaves
-
4 sliced black olives
-
Sun dried tomatoes
Method
For the pizza base
Add water to a small pan and add the herbs, spices and seasoning and bring it to a boil
Then add the polena and continuously whisk it on low heat for about 5 minutes till it starts to thicken.
Finally add the olive oil, whisk it and add this mixture to lightly greased cake tin and then bake it for 25 minutes till it looks golden and crisp
For the Pizza sauce

Take the pizza base from the oven and spread the seasoned puree over it

Add the AltCheese cheddar slices and top it up with spinach leaves, sun dried tomatoes and the black olives

Bake this for another 10 minutes

3. Vegan Bombay Sandwich
Here’s our take on the yummy Bombay sandwich, all the way from India. This is a definite favourite with Indians all over the country and now you can enjoy a vegan version of this with Alt Cheese’s Cheddar

For the Sandwich

Potato Masala - First, we need to prepare the potato masala

Cilantro mint chutney

Cooked Veggies - Boil, peel, and thinly slice beetroot

Sliced raw cucumbers, tomatoes, and onion

Sandwich Masala

Bread

Lemon Juice
For the potato masala

Boiled and mashed potatoes

Cilantro
-
Turmeric powder
-
Cumin powder
-
Salt

Red chilly powder

Garam masala

Garlic powder
Method
For the Potato Masala
Transfer mashed potatoes to a bowl and garlic powder, cumin powder, garam masala, chaat masala, salt, red chilly powder and turmeric to this and mix it all together.
For the Sandwich
Take the bread Slices and spread the mint cilantro chutney over it. Add a dash of lemon juice to this.
Take a spoonful of the potato masala that you prepared and spread it evenly on the bread.
Layer it with cucumber, tomato and onion slices
Sprinkle chaat masala over it and add the grated cheese on top of it and place the other slice on it.
Add this to your sandwich maker and grill it till it's toasted.
There you go! Your authentic Bomaby sandwich is all ready. Serve it with the mint chutney and some tomato ketchup.
